directory map support for install_amp

Description

Allow install_amp to have a directory map for installing the direct subdirectories of amp_conf/* to different locations..

This is needed to allow different engine backends (eg, openpbx would install a opbxetc/ directory to /etc/openpbx instead of astetc/ to /etc/asterisk).

It would also make it easier to exclude directories (eg, --without-fop) without passing around globals to the copy_recursive() function
